Korean Sweet & Savory Meat Patties (Ttoek-galbi, 떡갈비)

Tteok-galbi, Korean Meat Patties

If you’ve never tried Korean food before, 떡갈비 might be the perfect place to start. Think of it as Korea’s answer to hamburger steak—flavorful, juicy, and utterly comforting. I found that many countries have their own version of meat patties, but 떡갈비 stands out with its irresistible blend of savory and sweet flavors😋.

It’s a dish that’s easy to chew, thanks to the minced meat, making it great for kids. Plus, shaping the patties feels like playing with clay, so it’s a fun recipe to make together as a family 👪.

Ingredients 🥩🧄🧅

I love cooking, but let’s be honest—I’m too lazy to hunt down ingredients. Probably we are on the same page here. So to make things simple for you, I’ve linked the products I used (highlighted).
  • Pork: 300g, minced*
  • Beef: 300g, minced*
  • Spring onion: 1 stalk
  • Garlic: 3 cloves, minced
  • Ginger powder: 1/2 tsp
  • Onion: Half an onion
  • Sugar or honey: 1 tbsp
  • Soy sauce3 tbsp
  • Fish sauce1 tbsp
  • Sesame oil1 tbsp (optional)
* If you prefer, you can use only beef for this recipe - it'll still turn out just as delicious!

Recipe 📓

1. Prep the meat: Wrap the minced pork (300g) and beef (300g) in a kitchen towel to remove excess blood and any unwanted smell. Let it sit while you prep the other ingredients.

2. Chop and grind: Thinly slice the spring onion (1 stalk), mince the garlic (3 cloves), and grind the onion (a half) into a fine zest.
Too much effort? 😨  Then simply toss the spring onion, garlic and onion into a blender with 2-3 tbsp of water for a quick shortcut.

3. Make the sauce: In a bowl, mix soy sauce (3 tbsp), fish sauce (1 tbsp), sugar or honey (1 tbsp), sesame oil (1 tbsp), and the prepared green onion, garlic, and onion. Stir well and taste—adjust the soy sauce or sugar to your liking. It’s already delicious at this stage!

4. Combine meat and sauce: Add 3/4 of the sauce to the minced meat and mix.
Pro tip   Imagine you're punching or squeezing the face of someone who's been driving you crazy lately. It's oddly satisfying and ensures everything is well mixed!

5. Shape the patties: Form the mixture into round shapes like hamburger patties. Feel free to get creative with shapes!
Want some patties for later 😎 Freeze some of them at this step. You just need to defrost it before grilling.

6. Grill the patties: Heat a pan to medium (high heat will burn the sauce). Grill the patties for about 15 minutes, flipping occasionally. Brush or spoon the remaining sauce over the patties as they cook to add extra flavor. Adjust cooking time depending on the thickness of your patties.

7. Serve and enjoy: Plate the grilled patties and serve with rice or your favorite sides.
