In Amsterdam where I live, a new Korean egg sandwich café recently opened, and it’s been an instant hit—so much so that people are waiting in line for 30 minutes to an hour just to get one! This sandwich is inspired by the famous Egg Drop franchise in Korea, which is everywhere and super affordable.
Do I miss it? Yes.
Am I willing to wait an hour and pay over €10 for a sandwich? Absolutely not.
So what’s the solution? I cracked the recipe! 🥚🍞

*Which bread should you choose?
I tested three different types:
- Brioche: Sweet and extra soft. If you love a slightly sweeter sandwich, this is the way to go.
- Toast bread: Less sweet and more neutral, but I found it a bit rough in texture.
- Hamburger bun: Not the classic sandwich shape, but in terms of flavor, this was my personal favorite!
Recipe 📓
1️⃣ Prepare the bread: Slice the bread in the middle, but don’t cut all the way through—it needs to hold the stuffing later.2️⃣ Toast the bread: Heat a pan over medium heat, add 10g of butter, and toast the bread on both sides until golden.
3️⃣ Make the sauce: While the bread is toasting, mix honey (½ tsp), sriracha sauce (4 tsp), and plain yogurt (4 tsp) in a bowl.
4️⃣ Prep the avocado: Slice the avocado (½ stalk) into thin pieces.
5️⃣ Whisk the eggs: Crack 4 eggs into a bowl, add a pinch of ground black pepper, and whisk well. No need for salt since the butter is already salted.
Pro tip😎: If you want extra soft and creamy eggs, add 1-2 tbsp of milk before whisking.
6️⃣ Scramble the eggs: Remove the toasted bread from the pan and turn off the heat. Add the remaining 10g of butter, pour in the egg mixture, and stir continuously to scramble. The residual heat will cook the eggs perfectly—don’t overcook! The soft, creamy texture is the key to this sandwich.
7️⃣ Assemble the sandwich: Spread the sauce on both sides of the bread. Layer in cheddar cheese, avocado slices, and scrambled eggs. If you like, drizzle some mayonnaise over the filling before closing the sandwich.
8️⃣ Final touch: Pipe mayonnaise on top in a zigzag pattern and sprinkle parsley for garnish.
